Mediterranean Veggie Egg Skillet

  • 12 large eggs
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1 medium bell pepper, diced
  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, sauté for about 5 minutes until softened.
  3. Add spinach to the skillet and cook for another 2 minutes until wilted. Remove from heat.
  4. In a large bowl, beat the eggs and season with salt and pepper.
  5. Stir in the cooked vegetables and crumbled feta cheese.
  6. Transfer the egg mixture to a greased oven-safe skillet or baking dish.
  7. Bake in the preheated oven for 25-30 minutes or until eggs are set and the top is lightly golden.
  8. Remove from the oven and let it cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
