  • 6 oz smoked salmon, thinly sliced
  • 6 oz cream cheese, diced
  • 1 tbsp olive oil
  • 1/4 cup milk
  • 1/4 cup chopped fresh chives
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together eggs, milk, salt, and black pepper until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat. Add the egg mixture and cook gently, stirring constantly, until eggs begin to set but are still slightly runny.
  4. Remove from heat and gently fold in smoked salmon and cream cheese. Stir in chopped chives.
  5. Transfer the mixture to a greased baking dish and bake in the preheated oven for about 10 minutes, until fully set but still moist.
  6. Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or in a preheated oven at 325°F until warmed through.
