  • 12 large eggs
  • 1 pound turkey sausage
  • 1 medium onion, diced
  • 2 medium bell peppers, diced
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large non-stick skillet over medium heat, add olive oil and cook the turkey sausage until browned. Transfer to a large bowl.
  3. In the same skillet, sauté the onions and bell peppers until soft, about 5 minutes. Add in chopped spinach and cook until wilted. Add vegetables to the bowl with sausage.
  4. Crack eggs into a separate bowl, whisk thoroughly, and season with salt and pepper.
  5. Add the eggs and crumbled feta cheese to the sausage and vegetable mixture. Mix gently to combine.
  6. Pour the mixture into a greased baking dish and bake for 20-25 minutes or until the eggs are set and the top is slightly golden.
  7. Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
