  • For the shortbread base:
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp coconut oil, melted
  • 1 tbsp pure maple syrup
  • 1/4 tsp fine sea salt
  • For the date caramel:
  • 1/2 cup Medjool dates, pitted (about 6 dates)
  • 2 tbsp unsalted almond butter
  • 1/4 tsp fine sea salt
  • For the chocolate coating:
  • 1/2 cup dark chocolate chips (70% cocoa or higher)
  • 1 tsp coconut oil

Instructions

  1. Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the sides for easy removal. Set aside.
  2. In a medium bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, and salt. Stir until a dough forms. The dough should hold together when pressed between your fingers; if too crumbly, add 1 teaspoon of water at a time until it reaches the right consistency.
  3. Press the dough evenly into the bottom of the prepared loaf pan. Use the back of a spoon or your fingers to create a flat, compact layer. Place in the freezer for 10 minutes to firm up.
  4. While the base chills, make the date caramel: In a food processor, combine pitted dates, almond butter, and salt. Process until a smooth, thick paste forms, scraping down the sides as needed. The mixture should be sticky and spreadable; if it’s too thick, add 1 teaspoon of warm water at a time until desired consistency.
  5. Remove the chilled base from the freezer. Spread the date caramel evenly over the base using a spatula. Return the pan to the freezer for another 10 minutes to set the caramel.
  6. Melt the chocolate: In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until completely melted and smooth. Alternatively, use a double boiler over low heat.
  7. Remove the pan from the freezer. Lift the bars out using the parchment overhang and place on a cutting board. Cut into 4 equal bars (or 8 smaller bars).
  8. Dip each bar into the melted chocolate, using a fork to coat all sides. Let excess chocolate drip off, then place on a parchment-lined plate or tray.
  9. Place the bars in the refrigerator for at least 15 minutes to allow the chocolate to harden. Store in an airtight container in the refrigerator.

Notes

Storage: Keep bars in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months. To freeze, wrap individually in plastic wrap and place in a freezer-safe bag. Reheat: Enjoy straight from the fridge or freezer; no reheating needed. For a protein boost, add 1 scoop of unflavored or vanilla protein powder to the date caramel mixture, and reduce the almond butter to 1 tablespoon. This will increase protein by about 5g per serving.
