  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350°F (177°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the parchment with nonstick spray or butter.
  2. In a large bowl, whisk together the oats, flour, protein powder, baking soda, cinnamon, and salt until evenly combined. Break up any lumps of protein powder with your fingers or the back of a spoon.
  3. In a medium bowl, whisk together the melted butter, Greek yogurt, maple syrup, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and stir with a spatula until a thick, cohesive dough forms. If the dough seems dry, add water 1 teaspoon at a time until it just holds together.
  4. Press about two-thirds of the dough (roughly 1 cup) firmly and evenly into the bottom of the prepared pan to form the crust. Use the flat bottom of a measuring cup to compact it into an even layer. Set the remaining dough aside for the crumble topping.
  5. In another medium bowl, toss the diced apples with lemon juice. Sprinkle the cornstarch over the apples and toss to coat evenly. Add the granulated sugar, cinnamon, nutmeg, and salt, and stir until the apples are well coated.
  6. Spread the apple mixture evenly over the crust, pressing down gently with a spatula to create a level layer. Do not pack too firmly; you want some air pockets for a tender filling.
  7. Crumble the reserved dough over the apple filling, breaking it into pea-sized pieces with your fingers. Distribute evenly to cover most of the surface; some apple peeking through is fine.
  8. Bake on the center rack for 40-45 minutes, until the topping is golden brown and the filling bubbles at the edges. If the topping browns too quickly, tent loosely with foil after 30 minutes.
  9. Remove from the oven and place the pan on a wire rack. Let cool completely in the pan, about 1 hour. The bars will firm up as they cool, making them easier to slice.
  10. Once cool, lift the bars out using the parchment overhang and transfer to a cutting board. Cut into 4 equal bars (or 8 smaller squares). Serve at room temperature or chilled.
