  • Optional: 1 scoop vanilla or banana protein powder (adds ~20g protein per serving)

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Whisk until the mixture is smooth and fully combined; taste and adjust honey if you prefer more sweetness. This creamy base will mimic the classic pudding texture.
  2. Set aside 2 tablespoons of the crushed vanilla wafers for the top garnish. Reserve the remaining crumbs for layering.
  3. In each of four small serving glasses (about 6-ounce capacity), spread 1/4 cup of the yogurt mixture evenly on the bottom. Use a small spatula or the back of a spoon to create a smooth layer.
  4. Place 4 to 5 banana slices over the yogurt in a single layer, covering the surface. If you want extra protein, sprinkle 1/4 scoop of protein powder (if using) over the bananas before adding the next layer.
  5. Sprinkle 1 tablespoon of the reserved (non-garnish) wafer crumbs over the bananas. This adds a pleasant crunch between layers.
  6. Repeat the layering: add another 1/4 cup of yogurt, another 4 to 5 banana slices, and another tablespoon of crumbs. You should have two layers per glass.
  7. Finish each glass with a dollop of the remaining yogurt (about 2 tablespoons) and smooth the top.
  8. Garnish with the reserved 2 tablespoons of crushed wafers and a few fresh banana slices on top. For best flavor, chill the puddings for at least 30 minutes before serving, allowing the wafers to slightly soften while retaining some crunch.

Notes

Storage: Keep refrigerated in airtight containers for up to 2 days. The bananas may brown slightly but will still taste fine. Freezing is not recommended due to yogurt and banana texture changes. If you prefer a softer pudding, allow the assembled cups to sit in the fridge for 1 hour before serving. For an extra protein boost, add 1 scoop of vanilla or banana protein powder to the yogurt mixture in step 1 — this adds approximately 20g protein and 80-120 calories per serving, depending on brand. Adjust honey if the protein powder is already sweetened.
