  • 1 large avocado, halved, pitted, and sliced (about 200g)
  • 1/2 medium red onion, thinly sliced (60g)
  • 1 large Roma tomato (150g), thinly sliced
  • 4 large low-carb whole wheat tortillas (approx 45g each, or 180g total)
  • 1 lb (454g) sliced oven-roasted deli turkey breast (low sodium preferred)
  • 1 cup (40g) fresh baby spinach leaves, loosely packed

Instructions

  1. Cook the bacon: Place 8 slices bacon in a large nonstick skillet over medium heat. Cook for about 5-7 minutes, flipping once, until the fat renders and the bacon is deep golden brown and crispy to your liking. Transfer to a paper towel-lined plate to drain and cool. Do not wipe out the pan; a bit of rendered fat adds flavor to the wraps if desired, but for this no-cook assembly step, it is simply used for bacon cooking.
  2. Make the Greek yogurt spread: In a small bowl, whisk together 1/2 cup full-fat plain Greek yogurt, 1 tablespoon fresh lemon juice, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Set aside; the lemon juice brightens the yogurt and balances the rich bacon and avocado.
  3. Prepare the vegetables: Halve and pit the avocado, then use a spoon to scoop the flesh out in one piece. Slice it into 1/4-inch thick half-moons. Thinly slice the red onion and Roma tomato. Set all vegetables aside.
  4. Assemble the wraps: Lay 1 low-carb tortilla flat on a clean work surface. Spread 2 tablespoons (about 30g) of the Greek yogurt mixture evenly over the entire tortilla, leaving a 1/2-inch border around the edge. This spread acts as a binder and adds moisture without making the wrap soggy.
  5. Layer the turkey: Place 4 ounces (about 113g) of sliced turkey breast down the center third of the tortilla, slightly overlapping the slices. The protein base should be evenly distributed to ensure every bite is satisfying.
  6. Add the avocado and bacon: Arrange one-quarter of the sliced avocado (about 50g) directly on top of the turkey. Break 2 slices of the cooked bacon in half and lay the pieces over the avocado. The bacon adds crunch and a smoky, salty counterpoint to the creamy avocado.
  7. Top with vegetables and spinach: Layer one-quarter of the sliced red onion, one-quarter of the sliced tomato, and 1/4 cup of fresh baby spinach leaves on top of the bacon. The spinach provides a fresh, earthy note and extra nutrients.
  8. Fold and roll the wrap: Fold the bottom edge of the tortilla up over the filling, then fold in the left and right sides toward the center. Tightly roll the wrap away from you, keeping the filling tucked in. The tight roll prevents the ingredients from spilling out when cut.
  9. Repeat: Assemble the remaining three wraps using the same proportions of ingredients (each wrap gets equal amounts of turkey, avocado, bacon, tomato, onion, spinach, and yogurt spread).
  10. Slice and serve: Place each wrap seam-side down on a cutting board. Using a sharp serrated knife, slice the wrap cleanly in half on a slight diagonal. Serve immediately, or refrigerate for up to 24 hours if making ahead.

Notes

Store assembled wraps tightly wrapped in plastic wrap or parchment paper in the refrigerator for up to 24 hours. For best texture, consume within 12 hours to keep the tortilla from becoming soggy. To make ahead, prep all ingredients separately, then assemble just before serving. For a crispier wrap, lightly toast the tortilla in a dry skillet over medium heat for 30 seconds per side before assembling. Freezing is not recommended due to the fresh avocado and spinach.
