  • 1/2 tsp black pepper, freshly ground
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup dill pickles, chopped
  • 6 cups romaine lettuce, chopped (about 1 large head)
  • 4 oz sharp cheddar cheese, shredded (about 1 cup)
  • 1/2 cup full-fat Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp white vinegar
  • 1 tsp yellow mustard
  • 1/2 tsp sweet paprika
  • 1/4 cup water

Instructions

  1. In a small bowl, combine the Greek yogurt, mayonnaise, vinegar, mustard, paprika, and 2 tablespoons of water. Whisk until smooth. The dressing should be pourable; if too thick, add more water 1 teaspoon at a time. Set aside — chilling allows the flavors to meld but it can be used immediately.
  2. In a separate small bowl, mix the kosher salt, black pepper, garlic powder, and onion powder. This is the burger seasoning blend that will flavor the beef evenly.
  3. Place a large skillet over medium-high heat and add the olive oil. Heat until the oil shimmers, about 1-2 minutes. If you’re using a nonstick pan, you can skip the oil, but it helps prevent sticking and adds a subtle richness.
  4. Add the ground beef to the skillet, breaking it apart with a wooden spoon or spatula. Let it brown undisturbed for 2-3 minutes to develop a nice crust — this is key for flavor. Then break it into smaller crumbles and continue cooking, stirring occasionally, until the beef is fully browned and no longer pink, about 5-7 minutes total. Drain excess fat if necessary, leaving about 1 tablespoon in the pan for moisture.
  5. Sprinkle the seasoning mixture over the cooked beef. Stir well to coat every crumble. Cook for 1 minute more, allowing the spices to bloom and become fragrant.
  6. Pour the 1/4 cup water into the skillet. Scrape any browned bits from the bottom of the pan with the spoon — this deglazing step adds all that flavor back into the meat. Let the liquid cook off almost completely, about 1-2 minutes, until the beef is lightly glazed. Turn off the heat and set aside.
  7. While the beef rests, prepare the vegetables. In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced red onion, and chopped pickles. Toss gently to mix.
  8. Add the warm seasoned beef to the salad bowl. Sprinkle the shredded cheddar cheese over the top — the residual heat will begin to melt it slightly, mimicking that gooey burger experience.
  9. Drizzle the dressing over the salad. Toss everything together thoroughly so every leaf is coated. Serve immediately, while the beef is still warm.

Notes

Storage: Store the salad and dressing separately in airtight containers in the fridge for up to 3 days. Keep the beef in a separate container. Reheating: Reheat the beef in a skillet over medium heat for 2-3 minutes, or microwave in 30-second bursts until hot. Reheated beef will be more concentrated in flavor. Freezing: Cooked and cooled beef can be frozen in a sealed container or freezer bag for up to 2 months. Thaw overnight in the fridge before reheating. The lettuce, tomatoes, and onions do not freeze well.
