High Protein Cottage Cheese Brownie Batter Protein Bites - recipe card

Rich, fudgy, and intensely chocolaty, these no-bake protein bites are made creamy with cottage cheese and sweetened with dates. Each serving delivers 22g of protein, making them a decadent yet wholesome snack or dessert that satisfies chocolate cravings.

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats (40g)
  • 1/2 cup unsweetened cocoa powder (40g)
  • 1/2 cup full-fat cottage cheese (113g)
  • 1/4 cup creamy almond butter (64g)
  • 1/4 cup pitted Medjool dates (about 3 large), soaked in hot water for 10 minutes if firm
  • 3 tablespoons honey (64g)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons mini chocolate chips (30g), plus more for rolling

Instructions

  1. Soak the dates in hot water for 10 minutes if they are not already soft, then drain well. Soft dates blend more smoothly into the batter, ensuring a uniform texture without chewy bits.
  2. In a food processor, combine the rolled oats and cocoa powder. Pulse 5-6 times until the oats are coarsely ground, resembling a fine flour. This ensures the oats are fully incorporated and the bites have a smooth, fudgy texture.
  3. Add the cottage cheese, almond butter, soaked dates, honey, vanilla extract, and fine sea salt to the food processor. Blend for 60-90 seconds, stopping to scrape down the sides as needed, until the mixture is completely smooth and forms a thick, slightly sticky dough. The dough should hold together when pressed between your fingers; if it feels too dry, add 1 teaspoon of water and blend again.
  4. Transfer the mixture to a mixing bowl. Fold in the mini chocolate chips with a rubber spatula until they are evenly distributed throughout the dough.
  5. Line a small baking sheet or plate with parchment paper. Using a tablespoon or a small cookie scoop, portion out about 1.5 tablespoons (25g) of dough per bite. Roll each portion firmly between your palms to form a smooth ball. If the dough is too sticky, lightly wet your hands with water.
  6. Optional: roll each finished bite in a few extra mini chocolate chips, pressing gently so they stick, for a more decadent appearance.
  7. Place the protein bites on the prepared sheet and refrigerate for at least 30 minutes to firm up. This chilling step allows the textures to set and makes the bites easier to handle and eat.
  8. Once chilled, the bites are ready to serve. They can be stored in an airtight container in the refrigerator for up to 5 days.

Notes

Storage: Keep these protein bites in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 3 months; place them on a baking sheet to freeze individually, then transfer to a freezer-safe bag. Thaw in the refrigerator for 30 minutes or enjoy straight from the freezer for a firmer texture. No reheating needed — they are best eaten cold or at room temperature.
