This silky, decadent chocolate pudding is secretly packed with 25 grams of protein per serving, thanks to a generous amount of cottage cheese. It is a no-cook dessert that tastes like a rich mousse but is made with wholesome, simple ingredients.

  • 2 cups small-curd cottage cheese (4% milkfat, 1 cup = 220g)
  • 1/2 cup Dutch-processed cocoa powder (or regular unsweetened cocoa powder)
  • 1/3 cup honey (or maple syrup)
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon fine sea salt
  • 3 tablespoons milk (any kind, to adjust consistency)

Instructions

  1. Add the cottage cheese, cocoa powder, honey, vanilla extract, and salt to a food processor fitted with a metal blade. Pulse 10 times to begin breaking down the cottage cheese curds.
  2. Process on high speed for 2 full minutes, scraping down the sides and bottom of the bowl halfway through. The mixture should become perfectly smooth and glossy, with no visible curds. If you see any white specks, keep processing.
  3. With the processor still running, drizzle in the milk through the feed tube. Process for an additional 30 seconds. The milk helps loosen the pudding to a silky, spoonable texture without thinning it excessively.
  4. Stop the processor and taste the pudding. It should be rich, chocolatey, and pleasantly sweet. Adjust sweetness with a teaspoon of honey if desired, then process for 10 seconds to combine.
  5. The pudding will be quite thick and airy at this point, similar to a mousse. For a firmer, more traditional pudding texture, transfer it to a bowl, cover, and refrigerate for 30 minutes. For instant serving, proceed to step 6.
  6. Spoon or pipe the pudding into four small serving glasses or ramekins, dividing it equally. Use an offset spatula to smooth the tops.
  7. For a polished presentation, cover each serving with plastic wrap pressed directly against the surface to prevent a skin from forming. Refrigerate for at least 1 hour to allow the flavors to meld and the pudding to set to a firmer, creamy consistency.
  8. Before serving, optionally top with a dollop of whipped cream, a sprinkle of flaky sea salt, or a few chocolate shavings. Serve chilled.

Notes

Storage: Store in an airtight container in the refrigerator for up to 5 days. Freezing is not recommended as the texture will become watery upon thawing. To serve, spoon into bowls or glasses. If the pudding thickens too much after refrigeration, stir in a teaspoon of milk at a time until it reaches your desired consistency.
