High Protein Cottage Cheese Cookie Dough

High Protein Cottage Cheese Cookie Dough - recipe card

A decadent, spoonable treat that mimics classic chocolate chip cookie dough with a fraction of the sugar and double the protein. Creamy cottage cheese blends into a smooth base studded with dark chocolate chips, delivering a tangy-sweet contrast with a soft, luscious texture.

Ingredients

Scale
  • 1 cup cottage cheese (4% milkfat), at room temperature
  • 1/4 cup creamy almond butter (or peanut butter), at room temperature
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 3/4 cup almond flour (finely ground)
  • 1/2 teaspoon kosher salt
  • 1/2 cup dark chocolate chips (at least 70% cacao)

Instructions

  1. Place the cottage cheese, almond butter, maple syrup, and vanilla extract into a food processor fitted with the steel blade. Process on high for 1 to 2 minutes, scraping down the sides twice, until the mixture is completely smooth and no curds remain—this step is essential for a silky, dough-like texture.
  2. In a small bowl, whisk together the almond flour and kosher salt. Add this dry mixture to the food processor and pulse 8 to 10 times, just until the flour is incorporated. Do not overprocess; the dough should be thick and slightly sticky, not gummy.
  3. Scrape the dough into a medium mixing bowl. Fold in the dark chocolate chips with a rubber spatula, reserving about 2 tablespoons to sprinkle on top for presentation. The dough will be soft but should hold its shape when spooned.
  4. Taste the dough and adjust sweetness or salt if desired—if you prefer a sweeter cookie dough, add an extra 1–2 teaspoons of maple syrup and pulse briefly. If you like a deeper vanilla flavor, add 1/4 teaspoon more vanilla.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 1 hour. Chilling firms the dough and allows the flavors to meld; it will also make portioning easier. The dough will thicken as the almond flour absorbs moisture.
  6. After chilling, spoon the dough into 4 small ramekins or bowls. If you reserved chocolate chips, press them lightly onto the surface of each portion. Serve immediately, or keep chilled until ready to eat.
  7. For a firmer, more scoopable texture similar to actual cookie dough, refrigerate overnight. For a softer, dip-like consistency, let the dough sit at room temperature for 10 minutes before serving.

Notes

Storage: Keep the cookie dough in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in individual portions wrapped in plastic wrap for up to 2 months; thaw in the refrigerator overnight before serving. This is a no-cook dessert, so no reheating is needed—enjoy chilled or at room temperature. If you prefer a more cake-like treat, you can bake it at 350°F (177°C) for 10–12 minutes in a small baking dish, but note this changes the nutrition and texture and is not the intended preparation. For a vegan option, substitute cottage cheese with 1 cup firm silken tofu and use dairy-free chocolate chips.
