Instructions

  1. Place the cottage cheese in the bowl of a food processor fitted with the metal blade. Process on high speed for 60 to 90 seconds, stopping once to scrape down the sides, until the mixture is completely smooth and fluffy, with no visible curds. This step is crucial for achieving a whipped, dip-like texture rather than a lumpy one.
  2. While the food processor runs, prepare the cranberries. Rinse and pat them dry, then chop them roughly by hand or pulse them in a separate batch in the food processor—but do not over-process; you want distinct pieces for texture. Set aside.
  3. Remove the stem from the jalapeño, slice it in half lengthwise, and use a spoon to scrape out the seeds and white ribs. Mince the remaining flesh very finely. For a milder dip, use only half the jalapeño; for more heat, leave some seeds in.
  4. In a medium mixing bowl, combine the whipped cottage cheese, chopped cranberries, minced jalapeño, sliced green onions, lime juice, honey, kosher salt, and black pepper. Fold gently with a spatula until everything is evenly distributed. Taste and adjust salt or lime juice if needed.
