  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 8 oz part-skim mozzarella cheese, shredded
  • 4 large (10-inch) flour tortillas (high-protein or whole wheat optional)
  • 1/4 cup plain Greek yogurt (full-fat)
  • 2 tbsp freshly chopped parsley (optional, for garnish)

Instructions

  1. Preheat the air fryer to 375°F (190°C) for 5 minutes. Meanwhile, pat the chicken cubes dry with paper towels to ensure even browning.
  2. In a medium bowl, toss the chicken with olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Make sure each piece is evenly coated with the spices.
  3. Place the seasoned chicken in the air fryer basket in a single layer, leaving space between pieces for air circulation. Do not overcrowd; cook in batches if necessary.
  4. Air fry at 375°F (190°C) for 10-12 minutes, shaking the basket halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). The chicken should be cooked through and slightly crispy on the edges.
  5. Remove the chicken from the air fryer and let it rest for 3-5 minutes. This allows the juices to redistribute, keeping the meat moist. Then chop the chicken into smaller, bite-sized pieces.
  6. In the same bowl, combine the chopped chicken with the shredded mozzarella and Greek yogurt. Mix well until everything is evenly combined. The yogurt adds moisture and a subtle tang, and helps bind the filling.
  7. Lay a tortilla on a clean work surface. Place about 1 cup of the chicken-cheese mixture in the center of the tortilla, spreading it into a log shape leaving about 1 inch of space on the sides.
  8. Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom to the top, ensuring the seam is facing down. Repeat with remaining tortillas and filling. Use a toothpick to secure if needed.
  9. Lightly brush the outside of each wrap with a little olive oil (optional) to help them crisp up and turn golden in the air fryer.
  10. Place the wraps seam-side down in the air fryer basket, leaving space between each. Air fry at 375°F (190°C) for 4-6 minutes, until the tortillas are golden brown and crispy. Turn them over halfway through for even browning.
  11. Carefully remove the wraps from the air fryer. Let them cool for 2 minutes before slicing. The cheese will be extremely hot, so allow time for the filling to set slightly.
  12. Garnish with fresh parsley if desired, and serve immediately. Enjoy the contrast of the crispy exterior with the melty, flavorful interior.
