  • 2 cups full-fat Greek yogurt (plain, unsweetened)
  • 1/2 cup chocolate protein powder (whey or plant-based)

  • 3 tablespoons powdered erythritol or sweetener of choice
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt
  • For the chocolate pudding layer:
  • 1 cup unsweetened almond milk or skim milk
  • 1 (1 oz) package sugar-free instant chocolate pudding mix
  • For the topping:
  • 1/2 cup marshmallow fluff (or sugar-free marshmallow creme)
  • 1/4 cup crushed graham crackers (about 2 full sheets)
  • 1 tablespoon mini chocolate chips (sugar-free if desired)
  • Optional: 2 tablespoons chopped nuts for crunch

Instructions

  1. In a medium bowl, combine the Greek yogurt, chocolate protein powder, cocoa powder, sweetener, vanilla extract, and salt. Whisk vigorously until completely smooth and no lumps remain. The mixture should be thick and glossy. If it seems too thick, add a tablespoon of milk at a time until desired consistency.
  2. In a separate small bowl, whisk together the almond milk and instant chocolate pudding mix for 2 minutes until it thickens slightly. Let it sit for 5 minutes to set further.
  3. To assemble, divide the chocolate Greek yogurt base evenly among 4 serving bowls or jars (about 1/2 cup each). Smooth the tops with the back of a spoon.
  4. Spoon the chocolate pudding layer over the yogurt base, dividing equally (about 1/4 cup each). Spread gently to cover.
  5. Top each bowl with 2 tablespoons of marshmallow fluff. If desired, use a kitchen torch to lightly toast the fluff until golden brown, or place under a broiler for 1-2 minutes, watching carefully to avoid burning.
  6. Sprinkle each bowl with 1 tablespoon crushed graham crackers, 3/4 teaspoon mini chocolate chips, and optional nuts.
  7. Serve immediately, or chill for 15 minutes for a firmer texture. Enjoy!
  8. For a firmer set, refrigerate for at least 30 minutes before serving.
  9. Note: If you prefer a warm s’mores experience, microwave each bowl for 15-20 seconds just before serving to soften the marshmallow.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The graham crackers may soften over time; for best texture, add them just before serving. Freezing: Not recommended due to the yogurt base, which can become watery upon thawing. Reheating: If you want a warm dessert, microwave individual bowls for 15-20 seconds, but note that the yogurt may separate slightly.
