  • 1/2 cup low-fat cottage cheese
  • 2 tbsp powdered sugar (or 1 tbsp honey)
  • 1 tsp pure vanilla extract
  • 2 tbsp rainbow sprinkles (jimmies), plus extra for garnish
  • Pinch of fine sea salt
  • For serving: graham crackers, fresh fruit (strawberries, apple slices), pretzels, or vanilla wafers

Instructions

  1. In a medium bowl, combine 1 cup Greek yogurt and 1/2 cup cottage cheese. If you prefer a perfectly smooth dip, blend the cottage cheese in a small food processor or blender until creamy before mixing.
  2. Add 2 tbsp powdered sugar (or 1 tbsp honey), 1 tsp vanilla extract, and a pinch of fine sea salt. Whisk vigorously with a hand whisk or fork until the mixture is completely smooth and no lumps remain, about 1-2 minutes. The salt enhances the sweetness and balances the tang.
  3. Gently fold in 2 tbsp rainbow sprinkles using a spatula. Do not overmix, or the colors will bleed and turn the dip gray. Reserve a few sprinkles for garnish.
  4. Transfer the dip to a serving bowl and top with extra sprinkles. For best flavor and texture, chill in the refrigerator for at least 15 minutes to allow the flavors to meld.
  5. Serve cold with graham crackers, fresh fruit, pretzels, or vanilla wafers for dipping. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Storage: Keep dip refrigerated in an airtight container for up to 3 days. Stir before serving; sprinkles may bleed over time. Freezing is not recommended as dairy separates. For a protein boost, add 1/2 scoop unflavored or vanilla protein powder (adjust liquid if needed). Make it vegan by using plant-based Greek yogurt and coconut cream; note protein will be lower. For a sweeter dip, add an extra 1 tbsp powdered sugar or a few drops liquid stevia.
