This is a hearty, protein-packed version of the famous ‘Jennifer Aniston Salad’—a crunchy, herbaceous mix of bulgur, chickpeas, cucumber, pistachios, and feta, elevated with grilled chicken. Each bite is fresh and bright, with a lemon-mustard vinaigrette that ties everything together.

  • 1 cup bulgur wheat (fine grind)
  • 1 cup boiling water
  • 1 lb boneless, skinless chicken breast (about 2 breasts)
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt (for chicken)
  • 1/4 tsp black pepper (for chicken)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cucumber, finely diced (about 1/2 English cucumber)
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh mint, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup crumbled feta cheese (full-fat)
  • 2 tbsp lemon juice (from 1 lemon)
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/4 cup olive oil (for dressing)
  • 1/2 tsp kosher salt (for dressing)
  • 1/4 tsp black pepper (for dressing)

Instructions

  1. In a medium bowl, place the bulgur and pour 1 cup of boiling water over it. Stir, cover the bowl with a plate or plastic wrap, and let sit for 15 minutes until the bulgur is tender and has absorbed all the liquid. Fluff with a fork and set aside to cool slightly.
  2. While the bulgur soaks, prepare the chicken. Pat the chicken breasts dry with paper towels and season both sides with 1/2 tsp kosher salt and 1/4 tsp black pepper.
  3. Heat a grill pan or cast-iron skillet over medium-high heat until it’s hot but not smoking. Add 1 tbsp olive oil, then place the chicken in the pan. Cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Transfer to a cutting board and let rest for 5-10 minutes before slicing.
  4. In a small bowl or jar, combine the lemon juice, Dijon mustard, minced garlic, 1/4 cup olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Whisk or shake well until emulsified. Set aside.
  5. In a large mixing bowl, combine the cooked bulgur, chickpeas, cucumber, red onion, mint, parsley, pistachios, and feta cheese. Toss gently to distribute the ingredients evenly.
  6. Once the chicken has rested, dice it into 1/2-inch cubes. Add the chicken to the salad and pour the dressing over the top.
  7. Toss everything together until the dressing coats every ingredient. Taste and adjust seasoning with extra salt or lemon if desired.
  8. Serve immediately, or refrigerate for at least 30 minutes to let the flavors meld. This salad is excellent at room temperature or chilled.

Notes

Storage: Keep in an airtight container in the refrigerator for up to 3 days. The bulgur will absorb dressing as it sits, so you may need to add a splash of lemon juice or olive oil when serving leftovers. Freezing is not recommended due to the fresh vegetables and feta. For reheating, enjoy cold or at room temperature—avoid microwaving to keep the fresh texture. To boost protein further, add an extra 4 oz of grilled chicken or a scoop of plain Greek yogurt on the side.
