  • 1 tbsp olive oil
  • 1/2 cup (80g) yellow onion, finely diced
  • 2 cloves garlic, minced (about 1 tsp)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup (60ml) water
  • 4 low-carb flour tortillas (8-inch, ~5g net carbs each, e.g., Mission Carb Balance)
  • 1 cup (112g) shredded sharp cheddar cheese
  • 1/2 cup (120g) full-fat Greek yogurt (for serving), optional
  • 2 tbsp (30ml) olive oil, for crisping
  • 4 tbsp (60g) crushed pork rinds (or 4 low-carb crispy tostada shells, if preferred)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 5-6 minutes. If there is excess fat, drain it off to keep the filling from becoming greasy.
  2. Reduce heat to medium. Add the diced onion and cook, stirring occasionally, until translucent, about 2-3 minutes. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly to prevent burning.
  3. Sprinkle the cumin, smoked paprika, chili powder, salt, and pepper over the beef. Stir to coat evenly. Pour in the water and scrape up any browned bits from the bottom of the skillet. Simmer until the liquid has mostly evaporated, about 2 minutes. Remove from heat and set aside.
  4. Prepare a work surface. Lay out the 4 tortillas. Divide the cooked beef mixture evenly among the tortillas, placing it in a mound in the center of each tortilla, leaving a 2-inch border around the edges.
  5. Sprinkle 1/4 cup of shredded cheddar over the beef on each tortilla. Then top with 1 tablespoon of crushed pork rinds (or a low-carb tostada shell) to create a crunchy layer — this mimics the traditional tostada in the center.
  6. Place a small pan or pot (about 6 inches in diameter) over the filling — this helps you fold the tortilla neatly. Using a bench scraper or offset spatula, lift one edge of the tortilla and fold it toward the center, overlapping the pan. Continue folding the remaining edges, creating pleats, until the filling is completely enclosed and the wrap resembles a hexagonal bundle.
  7. Remove the pan (if used) and gently press down on the folded side to flatten slightly. The wrap should look like a thick, stuffed pancake. Repeat with the remaining tortillas.
  8. Heat 1/2 tablespoon of olive oil in a large nonstick skillet over medium heat. The oil should shimmer but not smoke. Place a crunchwrap folded-side down in the skillet. Cook until the bottom is golden brown and crispy, about 2-3 minutes.
  9. Carefully flip the crunchwrap using a wide spatula. Press down gently with the spatula to help it hold its shape. Cook for another 2-3 minutes, until the second side is golden and the cheese inside is melted—you can check by gently peeking at the edge, or use an instant-read thermometer to ensure the center reaches 165°F (74°C) for food safety.
  10. Transfer the cooked crunchwrap to a cutting board and let it rest for 1-2 minutes. This helps the cheese set and makes slicing easier. Repeat with the remaining wraps, adding more oil as needed and adjusting the heat to maintain a sizzle without burning.
  11. To serve, cut each crunchwrap in half with a sharp knife to show the layers. Serve hot with a dollop of Greek yogurt on the side if desired.
  12. Storage: Let leftover crunchwraps cool completely, then wrap individually in foil or plastic wrap. Refrigerate for up to 3 days or freeze for up to 1 month. To reheat, place in a 375°F (190°C) oven for 10 minutes (or from frozen, 15-20 minutes) until hot and crispy. Avoid microwaving as it will make them soggy.
