  • 1/4 cup (64g) creamy almond butter
  • 1/4 cup (60g) full-fat Greek yogurt
  • 2 tbsp (30ml) sugar-free vanilla syrup (or 1 tbsp honey + 1 tbsp water)
  • 1/2 tsp (2.5ml) pure vanilla extract
  • 1/4 tsp (1.25ml) almond extract
  • 1/8 tsp (0.6g) fine sea salt
  • 1/4 cup (30g) white chocolate chips, melted and slightly cooled
  • 2 tbsp (20g) rainbow sprinkles (jimmies), plus extra for garnish
  • 1/2 cup (60g) powdered sugar (for coating)
  • 2 tbsp (30ml) water (for sealing)
  • Red candy melts or red decorating icing, for drizzle (optional)

Instructions

  1. In a medium mixing bowl, combine 1/2 cup (40g) of the vanilla protein powder, almond butter, Greek yogurt, vanilla syrup, vanilla extract, almond extract, and sea salt. Stir with a spatula until a thick, cohesive dough forms. If the mixture seems dry, add water 1 teaspoon at a time until it holds together when pressed.
  2. Fold in the melted white chocolate chips and 2 tablespoons of rainbow sprinkles until evenly distributed. The melted white chocolate adds richness and helps bind the truffles.
  3. Using a small cookie scoop or tablespoon, portion the dough into 12 equal balls (about 1 tablespoon each). Roll each portion between your palms to smooth. Place on a parchment-lined plate and freeze for 15 minutes to firm up.
  4. While the truffles chill, prepare the coating: In a small bowl, whisk together the remaining 1/2 cup (40g) protein powder and powdered sugar. This mixture will create a sweet, protein-rich shell.
  5. Remove truffles from freezer. Working one at a time, dip each truffle into the protein powder mixture, coating evenly. Shake off excess and place back on the parchment. If desired, lightly press additional rainbow sprinkles onto the outside for decoration.
  6. For an optional red drizzle, melt red candy melts according to package directions and transfer to a small zip-top bag. Snip a tiny corner and drizzle over the truffles. Allow to set at room temperature or in the refrigerator for 10 minutes.
  7. Refrigerate truffles for at least 30 minutes before serving to firm up completely. They will keep in an airtight container in the refrigerator for up to 5 days.
  8. For a smoother coating, you can dip the truffles in melted white chocolate instead of the protein powder mixture, but note this will increase fat and sugar. The protein powder coating keeps them high-protein and lower in sugar.

For longer storage, freeze in a single layer on a baking sheet, then transfer to a freezer bag and freeze for up to 2 months. Thaw in the refrigerator overnight before serving. Reheating: These truffles are best served cold or at room temperature; do not microwave. Protein boost: For an extra protein kick, add 1 tablespoon of collagen peptides or unflavored protein powder to the dough. Alcohol-free: This recipe contains no alcohol. If using vanilla syrup, ensure it is alcohol-free (most are).
