  • 2 tbsp rice vinegar

  • 2 tsp toasted sesame oil
  • 2 cloves garlic, finely grated or minced
  • 1 tsp freshly grated ginger
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp neutral oil (avocado, canola, or grapeseed), for searing
  • 2 tbsp toasted sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Press the tofu: Wrap each block of extra-firm tofu in a clean kitchen towel or several layers of paper towels. Place a heavy skillet or cast-iron pan on top and let sit for 15 minutes to expel excess moisture. This step is crucial for achieving a crisp, caramelized exterior and preventing the tofu from steaming instead of searing.
  2. While the tofu presses, whisk together the maple-miso glaze: In a small bowl, combine 1/4 cup white miso paste, 3 tbsp maple syrup, 2 tbsp rice vinegar, 1 tbsp soy sauce, 2 tsp sesame oil, 2 cloves grated garlic, 1 tsp grated ginger, and 1/4 tsp red pepper flakes (if using). Whisk until smooth and set aside.
  3. Slice each pressed tofu block horizontally into 3 equal slabs, about 3/4-inch thick, yielding 6 steaks total. Pat the slabs dry with paper towels to remove any remaining surface moisture. Score the top of each steak with a sharp knife in a shallow crosshatch pattern, which helps the glaze penetrate and adds visual appeal.
  4. Heat a large non-stick or cast-iron skillet over medium-high heat for 2-3 minutes until a drop of water sizzles and evaporates immediately. Add 1 tbsp neutral oil and swirl to coat the pan. Carefully place half the tofu steaks in the skillet, leaving space between them. Sear undisturbed for 3-4 minutes until the underside is deep golden brown and releases easily from the pan. Flip and sear the other side for 3-4 minutes. Transfer to a plate and repeat with remaining oil and tofu.
  5. Reduce the heat to medium-low. Return all tofu steaks to the skillet, arranging them in a single layer. Pour the maple-miso glaze over the steaks, using a spoon to spread it evenly over the tops. Let the glaze bubble gently and thicken for 2-3 minutes, spooning it over the tofu repeatedly until it coats each steak in a glossy, sticky layer. Avoid high heat here, as the maple syrup can burn quickly.
  6. Once the glaze has thickened to a syrupy consistency and the tofu is heated through, about 5 minutes total, remove the skillet from the heat. Transfer the tofu steaks to a serving platter and spoon any remaining glaze from the pan over the top. Garnish with toasted sesame seeds and sliced green onions. Serve immediately.

Storage: Store leftover tofu steaks in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended, as the texture becomes spongy upon thawing. Reheating: Gently reheat in a lightly oiled skillet over medium heat for 2-3 minutes per side, or microwave covered for 1-2 minutes until hot.
