High Protein Mixed Berry Yogurt Parfaits

A creamy, tangy, and naturally sweet parfait layered with full-fat Greek yogurt, a quick mixed berry compote, and crunchy granola. Each serving packs over 25 grams of protein for a satisfying breakfast or snack that tastes like dessert.

  • 1/4 cup honey, divided
  • 1 tsp vanilla extract
  • 2 cups frozen mixed berries (do not thaw)
  • 1 tbsp fresh lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (slurry)
  • 1 cup granola (choose a low-sugar, high-protein variety if desired)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, whisk together the full-fat Greek yogurt, 2 tablespoons of honey, and the vanilla extract until smooth. This base will be tangy and lightly sweetened, providing a creamy contrast to the tart berries.
  2. Set a small saucepan over medium heat. Add the frozen mixed berries, the remaining 2 tablespoons of honey, and the fresh lemon juice. Stir gently with a rubber spatula and cook for 2 to 3 minutes, until the berries begin to release their juices and the mixture becomes syrupy.
  3. Reduce the heat to low. Give the cornstarch slurry a quick stir to recombine, then drizzle it into the berry mixture while stirring constantly. Continue to cook, stirring, for 1 to 2 minutes, until the compote thickens and coats the back of a spoon. The bubbles will become larger and slower as it thickens.
  4. Remove the saucepan from the heat and let the compote cool for 5 minutes. It will continue to thicken as it cools. Do not refrigerate yet—spooning warm compote over cold yogurt creates a beautiful temperature contrast.
  5. Select four parfait glasses or wide-mouth jars (each about 8 to 10 ounces). Assemble the parfaits by spooning a generous 1/4 cup of the sweetened yogurt mixture into the bottom of each glass, spreading it into an even layer using the back of a spoon.
  6. Spoon about 2 tablespoons of the cooled berry compote over the yogurt layer, spreading it gently. Avoid stirring—keeping distinct layers ensures each spoonful has a perfect balance of creamy, tangy, and sweet.
  7. Evenly divide half of the granola among the four glasses, sprinkling it over the compote. This middle crunchy layer provides textural contrast and prevents the bottom granola from becoming too soft.
  8. Repeat the layering: add another 1/4 cup of yogurt over the granola, followed by another 2 tablespoons of compote. Finish with the remaining granola and a small dollop of the remaining compote on top for a pretty presentation.
  9. Garnish each parfait with a fresh mint leaf for a pop of color and refreshing aroma. Serve immediately for the crispiest granola, or cover tightly with plastic wrap and refrigerate for up to 3 hours—after that, the granola will begin to soften.

Notes

Storage: Assemble parfaits (without granola) up to 2 days in advance; store in the refrigerator. Add granola just before serving to maintain crunch. Freezing: Not recommended, as yogurt and compote become icy and separate upon thawing. Reheating: No reheating needed; enjoy cold. To meal prep, store compote and sweetened yogurt separately, then layer with granola when ready to eat.
