These dense, fudgy no-bake brownie bites pack 13g of protein per serving while tasting like a rich chocolate truffle. Made with protein powder, almond flour, and cacao, they satisfy chocolate cravings without turning on the oven.

  • 1/2 cup almond flour
  • 3 tbsp unsweetened cocoa powder
  • 1/4 tsp fine sea salt
  • 3 tbsp creamy peanut butter (or almond butter)
  • 2 tbsp honey
  • 1/4 cup plain Greek yogurt (full-fat)
  • 1 tsp vanilla extract
  • 12 tbsp water (as needed)

Instructions

  1. Line a small baking sheet or plate with parchment paper. Set aside nearby so you can shape the bites quickly once the dough is ready.
  2. In a medium mixing bowl, whisk together the chocolate protein powder, almond flour, cocoa powder, and fine sea salt. Break up any clumps with the back of a spoon or a fork to ensure the dry ingredients are evenly distributed.
  3. Add the creamy peanut butter, honey, Greek yogurt, and vanilla extract to the dry mixture. Stir with a sturdy spatula or wooden spoon until a shaggy dough begins to form.
  4. If the mixture seems too dry and crumbly, add water 1 teaspoon at a time, mixing after each addition, until the dough comes together and holds its shape when pinched. Do not add more than 2 tablespoons, as overly wet dough will be sticky and difficult to handle.
  5. Once the dough is uniformly moist and no streaks of dry powder remain, stop mixing. Overworking can make the bites tough, so handle them as little as possible.
  6. Use a spoon or cookie scoop to portion the dough into 8 equal balls, about 1 tablespoon each. For even sizing, you can weigh each portion on a kitchen scale (about 25g per ball).
  7. Roll each portion between your palms into smooth, tight balls. If the dough sticks to your hands, lightly wet your fingers with cold water or coat them with a fine layer of cocoa powder.
  8. Place the rolled bites onto the prepared parchment-lined sheet. Gently press each one to form a slight puck shape if desired—this makes them look more like traditional brownie bites.
  9. Transfer the baking sheet to the refrigerator and chill for at least 1 hour. This allows the bites to firm up and the flavors to meld.
  10. After chilling, store the brownie bites in an airtight container in the refrigerator. They will keep for up to 5 days, and can also be frozen for longer storage.

Store in an airtight container in the fridge for up to 5 days. For longer storage, place in a freeze-safe bag or container and freeze for up to 2 months; thaw in the fridge for 1 hour before eating. For an extra protein boost, roll the finished bites in a light dusting of chocolate protein powder or crushed cacao nibs. If you prefer a peanut-free version, replace the peanut butter with an equal amount of sunflower seed butter and omit the honey if you want a more neutral flavor.
