  • ½ cup vanilla whey protein powder
  • 2 large eggs
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp fine sea salt
  • 1 cup pecan halves, toasted and roughly chopped
  • 1 (9-inch) unbaked pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (177°C). Place the unbaked pie crust on a baking sheet for stability. If using a homemade crust, keep it chilled until ready to fill.
  2. In a large mixing bowl, whisk together the Greek yogurt, vanilla whey protein powder, eggs, granulated sugar, vanilla extract, cinnamon, and salt until completely smooth, about 1 minute. Make sure no lumps of protein powder remain.
  3. Gently fold in the toasted, chopped pecans, reserving a few for topping if desired. Pour the filling into the unbaked pie crust and spread it evenly with a spatula.
  4. Bake for 40-45 minutes, or until the filling is set around the edges and slightly jiggly in the center. If the crust browns too quickly, cover the edges with foil or a pie shield after 25 minutes.
  5. Remove from the oven and let cool completely on a wire rack, about 1 hour. The pie will continue to set as it cools.
  6. Once cooled, refrigerate for at least 2 hours or overnight to fully firm up the filling. Slice with a sharp knife, wiping the blade between cuts for clean slices.

Notes

Storage: Store leftover pie covered in the refrigerator for up to 4 days. Freezing: Wrap individual slices tightly in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the refrigerator. Reheating: Enjoy chilled or at room temperature; if you prefer it warm, heat individual slices in the microwave for 15-20 seconds. For an extra protein boost, serve with a dollop of Greek yogurt.
