This high-protein chicken salad is creamy, crunchy, and packed with flavor, thanks to a tangy Greek yogurt base and crisp celery, red onion, and grapes. It’s perfect for meal prep, sandwiches, or lettuce wraps, delivering over 40 grams of protein per serving.

  • 4 cups (about 1 lb / 450g) rotisserie chicken, skin removed and shredded
  • 3/4 cup plain non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 cup celery, finely diced (about 2 ribs)
  • 1/4 cup red onion, finely diced (about 1/4 small onion)
  • 1/2 cup red grapes, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons sliced almonds, toasted (optional for crunch)

Instructions

  1. Remove the skin from the rotisserie chicken and discard. Shred the meat into bite-sized pieces using your fingers or two forks. You should have about 4 cups of shredded chicken. Set aside.
  2. In a large mixing bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, kosher salt, and black pepper. Whisk until smooth and creamy. Taste the dressing and adjust seasoning if needed—it should be tangy and well-seasoned since it will coat a lot of chicken.
  3. Add the shredded chicken, diced celery, red onion, halved grapes, and chopped parsley to the bowl with the dressing. Use a spatula to fold everything together gently until the chicken is evenly coated with the dressing. Do not overmix—you want to keep some texture in the chicken.
  4. For best flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. If you’re short on time, you can serve immediately, but chilling improves the taste and texture.
  5. Just before serving, taste the chicken salad and adjust seasoning with more salt, pepper, or lemon juice if desired. If using toasted almonds, sprinkle them on top for added crunch.
  6. Serve the chicken salad as a sandwich filling, in lettuce wraps, on top of a green salad, or with crackers. Enjoy!

Notes

Store in an airtight container in the refrigerator for up to 4 days. Stir well before serving. The salad can be frozen, but the texture of the Greek yogurt and mayonnaise may change upon thawing; if freezing, omit the grapes and celery, and add fresh ones after thawing. To reheat, enjoy cold—do not microwave. For meal prep, portion into individual containers with a side of crackers or greens.
