  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup chocolate protein powder
  • 2 large eggs
  • 1/4 cup granulated erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/4 cup unsweetened almond milk
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your oven to 350°F (177°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides for easy removal. Lightly grease the parchment with coconut oil or cooking spray.
  2. In a large mixing bowl, whisk together the Greek yogurt, eggs, erythritol (or monk fruit sweetener), and vanilla extract until smooth and well combined. The mixture should be pale and slightly frothy.
  3. In a separate medium bowl, sift together the cocoa powder, protein powder, kosher salt, and baking powder. Sifting is crucial to avoid lumps from the cocoa and protein powder, ensuring a smooth batter.
  4. Add the dry ingredients to the wet ingredients along with the almond milk and melted coconut oil. Gently fold with a spatula until just combined; do not overmix, or the brownies will become tough. The batter will be thick and glossy.
  5. Pour the batter into the prepared loaf pan and spread it evenly with a spatula. Bake for 22-25 minutes, or until the top is set and a toothpick inserted into the center comes out with a few moist crumbs attached. Avoid overbaking to keep them fudgy.
  6. Remove the pan from the oven and let the brownies cool completely in the pan on a wire rack. This allows them to set properly; cutting too early will result in crumbly brownies.
  7. Once cooled, lift the brownies out using the parchment overhang and cut into 4 equal squares. For clean cuts, wipe the knife with a damp cloth between slices.
  8. Serve immediately, or store for later. These brownies are delicious on their own, but you can also top with a dollop of Greek yogurt or a sprinkle of sea salt.

Notes

Storage: Store in an airtight container in the refrigerator for up to 5 days. Freezing: Wrap individual brownies tightly in plastic wrap and then foil; freeze for up to 3 months. Thaw in the refrigerator overnight. Reheating: Enjoy cold or at room temperature; if you prefer them warm, microwave for 10-15 seconds. Do not overheat, as they can become dry.
