These festive chocolate cupcakes are secretly packed with protein, thanks to Greek yogurt and a hidden protein boost. The result is a moist, rich crumb that tastes like a decadent bakery treat, crowned with a swirl of creamy frosting and a fresh strawberry ‘Santa hat’.

  • For the cupcakes: ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 2 tablespoons unsweetened cocoa powder
  • 1 large egg
  • ½ cup full-fat Greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons whole milk
  • ⅛ teaspoon vanilla extract
  • For the frosting: ½ cup full-fat Greek yogurt
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • For decoration: 4 fresh strawberries, hulled and halved
  • 8 mini marshmallows or 4 small white chocolate chips

Instructions

  1. Preheat oven to 350°F (177°C). Line a 4-cup muffin tin with paper liners. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder until no lumps remain. This ensures even distribution of leavening and cocoa.
  2. In a large bowl, whisk the egg, Greek yogurt, honey, milk, and vanilla extract until smooth and well combined. The mixture should be uniform in color with no streaks of yogurt.
  3. Add the dry ingredients to the wet ingredients and fold gently with a spatula until just incorporated. Do not overmix; a few small lumps are fine. Overmixing will develop gluten and make the cupcakes tough.
  4. Divide the batter evenly among the 4 muffin cups, filling each about ¾ full. Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
  5. Remove from oven and let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Cooling completely prevents the frosting from melting.
  6. While cupcakes cool, make the frosting: in a small bowl, whisk together Greek yogurt, cocoa powder, and honey until smooth and creamy. If too thick, add a teaspoon of milk; if too thin, add a little more cocoa. Refrigerate until ready to use.
  7. Once cupcakes are completely cool, spread or pipe a generous dollop of frosting on top of each cupcake, creating a rounded mound. This will be the base of the Santa hat.
  8. Place a strawberry half, cut side down, on top of the frosting. The pointed end should face up. If desired, trim the strawberry to create a more pointed tip.
  9. Add a small dab of frosting to the tip of the strawberry and press a mini marshmallow or white chocolate chip onto it to resemble the pom-pom of the hat. If using a marshmallow, you may need to cut it in half to fit.
  10. For best presentation, serve immediately. If not serving right away, refrigerate for up to 2 hours; the strawberries may release some juice over time.

Notes

Storage: Store unfrosted cupcakes in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Frosted cupcakes are best eaten the same day, as the strawberries will release moisture. Freezing: Unfrosted cupcakes can be frozen for up to 2 months; wrap individually in plastic wrap and then foil. Thaw at room temperature before frosting. Reheating: These cupcakes are best enjoyed at room temperature or slightly chilled; no reheating necessary. Protein boost: For an extra protein kick, add 1 scoop of unflavored or chocolate protein powder to the dry ingredients and increase milk by 1 tablespoon.
