  • 1 1/2 cups rolled oats (not instant)
  • 1 cup plain full-fat Greek yogurt
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 cup sweet potato purée (from about 1 large roasted sweet potato)
  • 1 scoop (30g) vanilla or unflavored protein powder
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp kosher salt
  • 1/2 cup chopped pecans, toasted

Instructions

  1. In a large bowl, combine the rolled oats, Greek yogurt, almond milk, sweet potato purée, protein powder, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and kosher salt. Stir well with a spatula until fully incorporated and no dry pockets of protein powder remain.
  2. Taste the mixture and adjust sweetness if desired by adding an extra teaspoon of maple syrup. The mixture should be thick but pourable; if it’s too thick, add a splash more milk.
  3. Divide the mixture evenly among four 8-ounce jars or airtight containers. Cover tightly with lids and refrigerate for at least 4 hours or overnight (8-12 hours).
  4. While the oats chill, toast the pecans: place chopped pecans in a dry skillet over medium heat. Cook, stirring frequently, until fragrant and lightly browned, about 3-5 minutes. Remove from heat and cool completely.
  5. Before serving, stir the oats well. If they have thickened too much, stir in a tablespoon of milk per jar to reach desired consistency.
  6. Top each jar with 2 tablespoons of toasted pecans. Serve cold or microwave for 30-60 seconds if you prefer warm oats.
  7. Store leftover oats (without pecans) in the refrigerator for up to 4 days. Add pecans just before serving to keep them crunchy.

Notes

Storage: Keep in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended as the texture of the oats and yogurt may become grainy upon thawing. Reheating: If you prefer warm oats, microwave individual servings for 30-60 seconds, stirring halfway, until heated through. Add a splash of milk if needed. To boost protein further, serve with a side of scrambled eggs or add an extra tablespoon of Greek yogurt on top.
