  4. Brush a 9-inch deep-dish pie plate with butter. Lay 1 phyllo sheet in the plate with the edges overhanging and brush with butter. Repeat with 7 more sheets, rotating each one slightly so the overhang covers the rim evenly. Keep the remaining phyllo covered with a damp towel.
  5. Spread the filling in the crust and fold the overhanging phyllo over the top, brushing with butter. Loosely crumple the remaining 4 sheets and arrange them on top, then brush with the remaining butter.
  6. Bake for 45 to 50 minutes, until deep golden and crisp and a food thermometer inserted into the center of the filling reads 160°F (71°C). Tent with foil if the top browns too quickly.
  7. Cool for 15 minutes before slicing into 6 wedges.
